This recipe serves 2
Ingredients:
- ¼ cup almond flour
- 2 eggs
- 1tsp backing powder
- 2 tbsp. smooth cream cheese
- 1tsp vanilla
- A few drops of stevia to taste (Xylitol)
- Cinnamon (optional)
- Butter for frying and serving
- Whipped cream
- Strawberries, blueberries or raspberries
Method:
In a medium bowl, whisk together almond flour, cream cheese, eggs, vanilla,stevia and backing powder until smooth.
Melt butter in a non-stick frying pan, pour in some batter (about 3 tablespoons). Turn around with a spatula and fry on the other side.
Serve with some whipped cream and berries of choice.
